Falafel Fail... well sort of.


So I will totally admit that I am frequently guilty of just skimming a recipe and usually that works to my advantage. Tonight it didn't. I used the Bobby Flay Throwdown falafel recipe which I thought I had used to make the falafel for Reesa and Julie's shower (and I may have I just probably read the recipe closer that time.) I got all the ingrediants, mixed them all together in the food procesor, formed three little ball while i heated the oil and threw them in. With in a matter of seconds they totally disingrated. So i thought okay my oil must not have been hot enough i waited a few minute and tried again. At this point i had two crying children waiting for dinner so i had to give up and make them something else. I then went back and checked the recipe again. This time i noticed there was 23 comments about this recipe. hmmm maybe i should have read those first. They were almost all about the disingrating falafel and they had almost all made the same mistake it had! The recipe called for dried chickpeas soaked overnight, but i was like why wait for them to soak overnight when i can just open a can. Well the answer is if you use canned chickpeas they are too wet and fall apart in the oil. So after this discovery i was actually able to save the falafels by adding several teaspoons of flour and dredging the balls in flour before frying. They falafel were actually very good although a little creamier on the inside then i would like. The moral of this story should be read the recipe more carefully... I will let you know if that actually works out.

Veggie Chili


So i finally got around to making the chili I posted earlier in the fall and it was well worth the wait!!! I used butternut squash instead of zuchini and that added a nice sweetness to the spice of the chili. A little cheese on top and some of Reesa's recipe pita chips makes a perfect snow day dinner!

Mushroom and Black Bean Tortilla Casserole

I made this vegetarian recipe tonight and it was pretty good.
I got the recipe from Everday Food Magazine!!

2 teaspoons extra-virgin olive oil
3/4 lb cremini or button mushrooms trimmed and quartered (I sliced them)
(I added onion)
1 garlic clove minced
1/4 teaspoon cayenne pepper
salt and
black beans (1 can rinsed and drained)
8 corn tortillas warmed and halved (I heated them on the gas flame from the stove)
2 cups salsa
1 1/4 cups shredded Monterey Jack cheese (I used half mexican cheese blend and half cheddar/jack mix))

1. Preheat oven to 400 degrees. Heat oil over medium-high heat in a large skillet. Add mushrooms (I put in onions too) and cook, stirring often until browned, about seven minutes. Add garlic and cayenne; season with salt and pepper. Add black beans and stir to combine. Cook until beans are warmed through, two minutes. Remove from heat.

2. Arrange tortilla halves in a 2-quart baking dish. (I oiled first with more olive oil.) Top with half the bean mixture, 1/2 cup salsa then sprinkle with one-third the cheese. Repeat with another layer of tortilla halves, bean mixture, salsa and cheese. Top with remaining tortilla halves, salsa and cheese. Cover with foil and bake until center is hot and cheese melts, ten minutes. Uncover and bake until cheese is bubbling, five minutes.

Pork Chops with apples and shallots

Okay so cooking meat is not my forte but i am always looking for an easy dinner for the meat eaters in my family. I have tried this recipe twice to rave reviews both times (from both Todd and Jude.) last week i made it with a side of delicious Parmesan polenta! Here is the recipe:
-preheat oven to 450
- lightly grease a 9x13 inch pan and layer with sliced apples and shallots seasoned with salt and pepper
- Heat oil in a large skillet and cook seasoned pork chops in pan 2-3 minutes a side or until golden brown
- Arrange pork chops on apples and shallots and top with 1/2 cup of BBQ sauce
- Place dish in oven and immediately reduce temperature to 375.
- Bake for 15 minutes or until internal temperature of 160

Pumpkin Pie without the Crust

Last night I made what HungryGirl calls Pumpkin Smash. It is just the middle of the pumpkin pie in a relatively healthy way. It is delicious!! Even better today cold then it was hot last night!
I used fresh pumpkin that I had frozen from last year, I imagine it would be even better with canned pumpkin and will probably try it again with canned.
I didn't have eggbeaters so I used one whole egg and two egg whites.
I used splenda for baking but you can also use sugar.

Ingredients:

One 15-oz. can pure pumpkin
One 12-oz. can evaporated fat-free milk
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
3/4 cup Splenda No Calorie Sweetener (granulated)
2 tsp. pumpkin pie spice

Directions:
Preheat oven to 350 degrees.

Combine all ingredients in a bowl, and mix thoroughly.

Place mixture in a baking dish (8" X 8" works well) sprayed lightly with nonstick spray, and bake in the oven for 45 minutes. (It will remain a little soft, like pie filling.)

Store leftovers in the fridge.

Veggies

We stopped at the farmers market this morning and picked up cauliflower, Romanesco (apparently a sweet combination of broccoli and cauliflower- its green and spiky), and beets.

So I made cauliflower soup (my new favorite recipe- so easy, saute onion, garlic & cauliflower, add broth, cook down and immersion blend... so delicious!)

I roasted the beats and plan to saute the beet greens one night this week.

While I had the oven on, I roasted a zucchini and squash that were going to go bad soon.

I am excited for dinner this week.

Calzones

I used fleishman's pizza crust yeast to make the dough. It was pretty easy, just followed the directions on the package. I used some whole wheat flour and some regular all-purpose flour.

The whole thing, making the dough, making the calzones and baking them took less than an hour.

When we took them out they looked great but the crust didn't crisp up like we like. The crust was soft and dough-y, it wasn't bad, just not like we like it. We will have to try again to decide if it was the pizza crust yeast or something else (too short baking time, didn't slit the top, etc)

No Knead Bread

This is the link for the basic no knead bread recipe. I would google 'no knead bread' because there are LOTS of varieties and you can also just make it up.

The only no knead that I have tried was http://noteatingoutinny.com/2007/04/23/cinnamon-raisin-no-knead-bread-french-toast-with-yogurt-carmelized-apples/. It is great but I don't put as much, if any, sugar on top because it burns.

Zuchini Fritters




Everyday foods is my new obsession. I love the show (PBS Saturdays), Love the magazine (cute little format) and Love the blog (http://everydayfoodblog.marthastewart.com/). So when i saw this kid friendly recipe i was all in. It did require a few ingredients that i dont normally have on hand, like buttermilk, but it was worth going out for. My sous chef, Jude, enjoyed making them but did not actually like them as much as i thought she would. Her parents however were happy about that because it meant more for us. Both Todd and I could not stop eating these. Think the parmesany love child of a potato latke and a pancake. They were also very good reheated in the toaster!

Soup x 3

I had a few camp friends over last night and made 3 different kinds of soups that were delicious!!

Cauliflower Soup
I took onion and garlic and sauteed them in olive oil. I added the cauliflower, sauteed a little, then added the broth and cooked it until the cauliflower was really soft. Then I used the immersion blender (favorite thing ever!) to make it into soup. I added a bit more broth to thin it out a little and salt and pepper. It was delicious and very creamy, even though there wasn't any milk or cream in it. Everyone seems to really enjoy it.

Butternut Squash Soup
I roasted a butternut squash in the oven (cut in half, took the seeds out and put on a baking sheet until soft). I sauteed onion, garlic and sliced carrots in olive oil. I added the butternut squash and broth. I cooked it down for a while (til the carrots were really soft) then used the immersion blender to make it into soup. I added a but more broth to thin it out. It was super sweet, which, I think, was a combination of the carrots and butternut squash. It was delicious!

Tortilla Soup
I sauted onion, garlic, a jalapeno (seeded) and poblano peppers (light green- which are sweeter and milder than green peppers-yum). I added cumin, chili pepper, a bit of cayenne, and whatever other seasonings sounded good. I added a few tablespoons of tomato paste and cooked it together. I added broth and brought to a boil. I added chicken and boiled it until the chicken was cooked, then took out the chicken and shredded it and added it back to the pot. I had to season it a bit more and added some lime juice. I imagine you could make it with extra veggies and no chicken.

I served soup crackers, cheeses (cauliflower and tortilla), pumpkin seeds (butternut squash), avocado (tortilla), tortilla chips (tortilla) on the side.

YUM!!

I also made bread..... which if you are interested, you should try a no-knead recipe which is super easy, you just mix it together, let it sit for 18hrs and then bake it in a hot dutch oven. Let me know if you want me to add a recipe. It is surprisingly easy.

Pumpkin Seeds

The real reason i carve pumpkins every year is for the seeds. I love pumpkin seeds. I rinse them, season them with a heavy hand of sea salt and fresh ground pepper and roast them in the oven until they just start to turn brown. This year we only carved two smallish pumpkins so i only made one pan and the seeds were gone before they had even fully cooled, but i have a few more pumpkins and i am considering taking the seeds out before they go bad. Anyone have any good pumpkin seed recipes?

Matzo Ball Soup

We both had a wonderful weekend full of more junk food then we would care to admit! So tonight it is easy Matzo Ball Soup from the box. I buy the box of Matzo Ball & Soup Mix ( I usually buy Manashevitz (sp?) but other brands are good too). I follow the directions on the box but add lots of veggies to the soup broth... tonight it is carrots, celery, onion and frozen peas and carrots. I also added raw chicken breast tonight. I may also add some dill. It takes about 40 min total, most of it is waiting for the broth to boil and the raw matzo balls in the fridge, then waiting for it to all cook together. It tastes yummy and is a great super easy dinner.

ps. you don't have to be Jewish to eat this!

Roasted Cauliflower

I also roasted a head of cauliflower tonight. We haven't eaten it yet but we tried a bite and it was good.

Cut up on head of cauliflower. Toss in olive oil with salt, pepper and chopped garlic. Roast at 500 for 15-20 minutes.

I might try to make soup out of it (I am totally into my handblender right now), I will let you know if that happens!

Pumpkin Soup

We had pumpkin soup for dinner after a big pumpkin adventure. We roasted and pureed our own pumpkin (hence the adventure) but I am sure you could use canned puree.

Warm 1 and 1/2 cups of milk (we had 1%, so we used that). Add 2 cups pumpkin puree and mix. Then add about 1 tablespoon of butter, about 1 and 1/2 tablespoons of maple syrup, about 2 tablespoons of brown sugar, a pinch of salt and a couple shakes of nutmeg.

It was delicious!!

Eggplant "Meat"balls

These were ok, but kinda bland... They were missing something but I can't put my finger on what they needed. But, I think that it's a good start to improve upon, which is why I'm posting. Let me know if you have any ideas!

- 1 eggplant, peeled & cubed
- 1/2 onion, chopped
- garlic, minced
- 2-3 eggs, beaten (I only use the whites)
- fresh basil, chopped
- 1 cu. breadcrumbs
- salt & pepper to taste

1. Lightly saute eggplant until tender. When done, transfer to food processor and lightly process.
2. Saute onion and garlic. Add to eggplant. Add all other ingredients and mix well. Once mixed, form "meat"balls and place on very well greased cookie sheet.
3. Cook in 350 degree oven for 20 - 25 minutes.

I served with a chunky tomato sauce that I threw together (with sundried tomatoes, garlic, onions, and peppers), and some sauted spinach and mushrooms.

Mexican Lasagna

Came up with this by wanting to clean out my fridge before going to the grocery store tomorrow, even though I had to run to the store to get tomatoes, but I'm glad I did because it was really good!

- flour tortillas
- 1 onion, chopped
- garlic, minced
- bell pepper, chopped (I used an orange pepper)
- packet of taco seasoning (I used 1/2 the packet)
- can of black beans
- corn
- 2 tomatoes, chopped
- cilantro, chopped
- 2-3 green onions, chopped
- shredded cheese

1. Saute onion and garlic until translucent. Add pepper and saute a couple minutes more. Add black beans. Add taco seasoning and about 1/2 to 1 cup water. Simmer until sauce has thickened.
2. Meanwhile, chop tomatoes, cilantro, and green onion. Mix with corn and set aside.
3. Lightly spray pie pan with Pam. Layer tortilla, bean mixture, tomato mixture, and cheese. Repeat.
4. Cook in 375 degree oven until cheese is melted (it was about 20 minutes, but I had to use soy cheese, so it may be a little less for regular cheese?)

I served with some sliced avocado and it was so yummy!

Mediterranean Tuna

Tonight was the first time I have made dinner in ages. I actually miss it. I didn't cook but Julez and I really enjoyed my concoction.... and she doesn't usually eat fish.

Celery, 1 stalk grated
Carrot, 3 baby grated
Heart of Palm, 1 chopped
Artichoke Hearts, 2 chopped
Capers, handful chopped
Calamata Olives, handful Chopped
Tuna, canned white drained - I used two cans
Lemon Juice - to taste... I would use fresh but I didn't have any, so I used bottle and it was good

Mixed together! That's it!
I would eat it with crackers if we had them but we didn't so I just ate it out of the bowl and it was delicious!

Brussels Sprouts

So until pretty recently i thought that i hated Brussels sprouts. Then we went to a friends who made them for dinner and mostly to be polite, i ate them and immediately discovered that i was totally wrong about Brussels sprouts, they are Delicious. So when they had the last week at the farmers market, i decided to give it a try. For the first time making them i thought I would just roast them with olive oil, salt, pepper and garlic. I did cut them in half before roasting. They were slightly caramelized and a little sweet and Delicious. I am thinking if they still have them this week i might try a balsamic Brussels sprouts next week.
